The Chaîne des Rôtisseurs, is an international gastronomic society that is dedicated to bringing together professional and non-professional members from around the world who appreciate wine, cuisine and fine dinning. Members are treated to the ultimate in gastronomic delights, with many (if not all) of the gala dinner menus and dishes specially created for them by the regions best chefs.
Shown below, is one such menu from a gala dinner that was held at the Cascades restaurant in The Fairmont Dubai.
The menu itself, was loosely inspired from the decor of the Cascades restaurant - which is quite dark and very slick, with various coloured lights bouncing off the large atrium walls. The menu utilises many different medias and textures; which includes the use of food board, lamination, luminescent colours and spot varnishes; with these combining to create a one of a kind limited edition (25) menu in keeping with the nature of the event.
