Recently I started working with a really exciting little project called One Night Only, curators of unique one-night-only pop up restaurants. My first foray into their world was at the soft opening for Vendemmia in the Madrona neighborhood of Seattle.

 

The air was a little tense before the big event as the chef let slip that the gas had just been turned on that afternoon at 2pm and it was his first wave of customers in this new venture... that would make anyone tense. This was also ONO's first soft opening, until now they had curated the entire experience themselves from the chef to the location to the wineries represented at the event.  

 

With a long list of dishes to serve, the diners were happily chatting and enjoying the new space while consistently presented with fresh dishes from oysters to gnocchi and beet salad to grilled king salmon.
