This is a fresh and fruity wine which is bottled before its fermentation is finished. Therefore, it must be consumed within a short space of time. As the wine is bottled coinciding with the local celebration of the slaughtering of the pig we decided to sanctify the pig on its day of sacrifice inspired by vintage illustrations of saints.
