The name, c.1880, was when the building was built. Story-wise, that's restaurant name is pretty thin. It's received with a shrug. That's nice. The name that so clearly refers to the past says nothing about the forward-thinking philosophy of the chef/owner. 

If the restaurant was named after the chef/owner, that's one thing. But when the name creates a strong visual, it's silly to ignore it. Our first order of business: research the era. The late-Victorian age was a time of great technological and intellectual advancement. After researching the 1880's we discovered that era saw leaps in technology. World travel. Theories of evolution. The birth of electricity. It was the time of inventors. Rather than a victorian parlor (because his budget could not support doing that well) we decided to build an inventors workshop. Roughly constructed furniture. Utilitarian lighting. Objects of curiosity encased in jars. These materials and this design concept created a warm an inviting space giving customers their own opportunity to discover a new dining experience.
