Green Pea & Chilli Soup
1 kg Frozen Peas
2 tsp Olive Oil
1 Medium Onion
3 ribs Celery
2 clvs Garlic
2 Green Chillies
500mls Vegetable Stock
Method:
1. Heat the oil in a pot; add the onion, garlic, celery and chillies and sweat to soften.
2. Add the stock and bring to the boil.
3. Add the peas and cook for 5 mins.
4. Liquidise the soup and pass through a sieve.
5. Gently reheat and adjust consistency and seasoning.
4tbsp Crème Fraiche
1 Green Chilli
2 tbsp Flat leaf Parsley
Method:
1. Garnish the soup with a tablespoon of crème Fraiche.
2. Sprinkle with the chillies and herbs.
