I started cooking at a local hotel as a Commis chef after he dropped out of university where he was studying Geography. After a couple of months he started at Glenrothes College studying Hospitality. During the three years at college I was extremely lucky to learn from and gain experience from Scott Lyall, Pamela Fowlis and Norman Bendex who are outstanding and talented chefs who recognised that I had the right attitude and enthusiasm. During my first year was lucky enough to win Scotland and Ireland Young chef of the Year. I then got involved with the Scottish Junior Culinary team from 2002 – 2006 and was a member of the main team that won the world Championships at Expogast 2002. In the next couple of years I travelled to places such as Stockholm, Chicago, Barcelona, Erfurt, Paris, Luxembourg City, and Dublin. Where I had the opportunity to compete and work.

After college I began working at a local 3 rosette restaurant as a Commis chef and worked his way up to Chef de Partie where he was offered the opportunity to work at a teaching capacity at Glenrothes College on a part time basis. I also regularly deliver live demonstrations to the public in conjunction with Quality Meat Scotland, Seafood Awareness and on behalf of the college also covering a wide range of all food types and delivering this to a large contrast of people from primary school children to adults. In Jan 2006, I Mentored 3 catering students from Adam Smith College to national recognition wining the UK student Chef Team Challenge. I have regularly appeared on the UK Food Channel programme Great Food Live and also do a lot of demonstrations at food festivals in central Scotland. I have also appeared several times on the ITV show ‘Daily Cooks’.

Over the last 3 years I have done a few live demonstrations to members of the public at the Good Food Show Live in Glasgow, and have worked alongside QMS to deliver training demonstrations at Jordanhill University to trainee teachers. Over the last couple of years I have appeared a few times on Market Kitchen and have filmed Half Time bites (1 minute adverts) that were shown in mid June on stv to coincide with the world cup.

Over the last year I have made several appearances on the magazine show ‘The Hour’ worked for Seafood Scotland and Scottish Fisheries Promotion Group at the Royal Highland Show and Tall Ships Race at Greenock Morton. Read Less
