One of the first questions that we are faced with is what is Celiac Disease and how do you get this disease? Celiacs is when the ingestion of gluten results in a great damage to the epithelial cells that line the surface of the small intestine and is often associated with other negative effects to the body. When the epithelia cells are damaged, digestion and absorption of nutrients are impaired malabsorption and the body attacks itself as a form of self defense.  You do not encounter this disease by eating the wrong foods, or not getting the right nutrition’s; Celiac Disease is caused by the genetic makeup to develop it, but is triggered by environmental and immunologic factors. This is also a thing that you can not grow out of, the only true treatment is to convert into a gluten-free diet.
