Sensing Bread Production
“The taste of the apple lies in the contact of the fruit with the palate, not in the fruit itself.”
- The Eyes Of The Skin, Juhani Pallismaa

The forces work simultaneous. They float over, under and merge. They decrease, increase and affect each other. The forces are hard to distinguish and often sound, smell, movement, light, shadow, reflection, structure and texture melt together into one great mass. The forces are perceived by the senses and are experienced in parts and as a whole.
Borough Market is a Farmers Market, located in a vibrant part of London, with delicacies from the adjacent areas of London and from the far corners of the world. Above the market and street level runs a maze of rail roads and just around the corner lies an old Cathedral. The River Thames floats nearby and the Tube is right below the surface.
The market is an ever changing ephemeral structure adjusting to time and audience - so does the bakery. From being a compact and closed body it gradually unfolds to become a light and penetrable structure, which is flexible to the varying needs of production and visitors.
The hectic atmosphere on a busy market day overwhelms you with sensory experiences. This project ads even more to the experience by presenting the processes of bread making in a visible and sensory perceptible way. Whether passing, entering or withdrawing yourself from the market swarm to rest on the roof of the bakery, you are automatically engaged to discover phenomenas connected to the process of making bread - from a bag of grain to a freshly baked bread.
