Kortis is a molecular gastronomy Institute. It investigate physical and chemical processes that occur while cooking food. In addition to knowledge regarding the reasons why we prepare food in ways familiar to us, the Institute helps develop new techniques for food preparation and recipes. Molecular gastronomy seeks to provide scientific knowledge on food preparation to enhance the eating experience. Institute named after Nicholas Kurti and Herve This, who coined the term molecular gastronomy. The Institute seeks to broaden the field of molecular cooking into the home kitchen.
