the future is a post apocalyptic wasteland. the remaining humans are survivalist nomads living off junk and scraps from the "old world".

In this reality the Don is a crazy hobo, maybe with military gear instead of his knight armor. Sancho is much more aware of the toxic environment so he can be constantly worried about radiation and disease and supplies and can wear a hazmat suit.
