"三山"大排档︱SANSHAN DAPAIDANG

“三山” 來源於揭西河婆盆地周圍的三座神山:明山、巾山、獨山,泛指今大陸南海粵東地區。它們曾是群巫所從的神山,是巫師們通天的地柱,在進入農業社會以後,演化為掌管農業天氣的風神、雷神、雨神,相傳宋太祖趙匡胤借得三山的神力幫助,後才將劉張之亂平息,遂封三山國王。最後演變成為“三山國王”神。為粵東地區原住民,包含潮汕人、海陸豐人及粵東客家人等族群的精神信仰,隨著當地移民向外擴展,成為粵東、東南亞、香港澳門及臺灣民間信仰之壹。位於河婆盆地周圍的三座神山流傳至今留下了不少傳說,至此,粵東地區及港澳臺等都有每年初春紀念三山國王出遊之行,建有諸多三山國王廟以示紀念。 

中古以前粵東地區因地處蠻荒而不發達,自宋代以來,隨著城市手工業的逐步繁榮和城鎮人口的增多,加之接受中原文化影響等因素,粵東地區開始發展,受中原烹飪技藝的影響並逐漸形成了自己特有的小眾飲食文化,以大什錦為首的“大排擋”成為粵東人民的喜愛。地處亞熱帶的粵東,南臨大海,海產豐富。是以烹制海鮮見長。對海鮮的烹調選料考究,制作精細,至於以醬碟佐料,達到新鮮美味。制作精妙,加工方式依原料特點而多樣化,有如潮汕飲食特色的打冷菜那哥魚,雞腿魚,灰仙等各類魚飯;鹵水鵝、鴨、豬肉、雞蛋、豆幹等各類鹵水;腌制河鮮以及麻葉、白粥、番薯粥等等。 

三山地區古時因以地處荒涼,天災洪惡常來襲擾。是以神龍玄虎兩大神獸鎮守據地,使巫神天災不敢來襲。守得三山地區壹方民眾百年風調雨順、年年有余、五谷豐熟、年谷順成、六畜興旺。謂曰:將忠國王八方驅邪伏魔 虎踞靈地戈意辨惡揚善。神保葉胥千載國泰民安  龍蟠慶雲九州風調雨順。 

此次“三山”大排檔餐飲品牌形象,以民俗文化為依托,深究當地餐飲文化特色,發掘更深層次的文化蓄力。力求在傳統文化和現代都市美學不斷融合的今天,讓民俗與世界對立模糊。傳承古今民俗文化又能突破固有的視覺界限,延續品牌傳統神韻再賦予新視覺概念。


"sanshan" originated from the three God mountains around the Hepo Basin in Jiexi: Mingshan, Jinshan and Dushan, which refer to the eastern part of Guangdong Province in the South China Sea. They were the God mountains from which the witches worship and the pillars of the witches to go to heaven . After entering the agricultural age, they evolved into the Wind God, Thunder God and Rrain God , who in charge of the agricultural weather. It is said that Zhao Kuangyin, the Taizu of the Song Dynasty, had borrowed the help of the God of the three mountains before he put an end to the unrest of Liu Zhang, and then sealed the three god mountains as kings, and finally became the God of the three mountains, which has become the spiritual beliefs of the aboriginal people in eastern Guangdong, including Chaoshan people, Hailufeng people and Hakka people in eastern Guangdong. With the expansion of local immigrants, it has become one of the folk beliefs in eastern Guangdong, Southeast Asia, Hong Kong and Taiwan. There are many legends about the three God mountains. Every early spring in eastern Guangdong, Hong Kong, Macao and Taiwan, there are many temples built to commemorate the trips of the Kings of the Three Mountains.

Before the Middle Ages, Eastern Guangdong was underdeveloped because of its barrenness. Since the Song Dynasty, with the influence of the gradual prosperity of urban handicraft industry, the increase of urban population and the acceptance of Central Plains culture, Eastern Guangdong began to develop. Influenced by the cooking skills of the Central Plains, it has gradually formed its own unique minority diet culture. The "big row" headed by Dashijin has become the favorite of the people of Eastern Guangdong. Located in the subtropical east of Guangdong, south of the sea, which rich seafood, is good to cooking seafood. Seafood cooking materials are exquisite and refined to achieve fresh and delicious, and processing methods are diversified according to the characteristics of raw materials, such as cold dishes featuring Chaoshan diet: Nage fish, chicken leg fish, grey fairy and other fish meals; brine goose, duck, pork, eggs, dried beans and other kinds of brine; pickled River fresh and hemp leaves, white leaves, Porridge, sweet potato porridge and so on.

In ancient times, Sanshan area was often disturbed by natural disasters and floods because of its desolate location. It is based on the two God beasts, Dragon and Xuanhu, which make the natural disaster and witches dare not attack. Guardian the people in  Sanshan area has been in good weather for a hundred years,  five grains are ripe, and six livestock are thriving. That is to say: will be loyal to the king eight sides exorcise evil Voldemort Tiger in a spiritual way to distinguish evil and promote good. Gods bless the Yexu for a thousand years of good weather ,and dragon congtrulate the good weather.

This time, the brand image of the "sanshan" catering industry is based on folklore culture, which deeply explores the local catering culture characteristics and explores deeper cultural strength. We strive to fuse traditional culture and modern urban aesthetics, so that the opposition between folklore and the world is blurred. Inheritance of ancient and modern folk culture can break through the inherent visual boundaries, continue the traditional charm of the brand and give new visual concepts.
