In our gastronomic memory , Dhabas aren't just eateries by the highway, they are bookmarks of unforgettable experiences.

I love to hit the roads whenever time permits for such adventure and  I always take pit stops to freshen up and subdue my hunger at any Dhaba that comes my way, during which I make it a point to observe the space and functioning of the dhaba, so as to what actually happens in these kitchen who are feeding thousands of travellers every day, to the surrounding tables and also how the people managing the place move to and fro inside the area. The spaces have worked as a centre for the stories amongst the frequent travellers and even the ever travelling truckers who are transporting goods from one part of the country to the other. 
To think about these stories and conversations as one indulges in delicious food takes anyone into a different world all together.
