Hydroponic Restaurant
What a contemporary ecological restaurant should be? Our question was inspired by a Climate Lab and Vox collaboration about the diet that helps fight climate change. This interior concept is based on research into approaches for solving the problem of sustainable food production and consumption in the cities.

The role of agriculture in climate change is largely related to emissions from the production, processing, packaging, storage, and transportation of food. In the past century, the challenge was to produce large amounts of food for a rapidly growing population. Today we need new approaches to the production of food for cities. The two solutions that we found — circular economy and hydroponics — are not mutually exclusive, although the first obviously requires a more radical approach.

Circular economy
Recently, a study was published that showed how much effort would be needed to change the economic model of food consumption in cities. Although it would be extremely interesting to imagine how a change in logistics could radically affect the appearance and functionality of restaurants, we decided to look for less complex solutions to the problem. Another approach that we found was an attempt to “circumvent” the system using the hydroponic method of food production.

Hydroponics
High expectations rely on hydroponics because it requires less space in comparison with traditional and organic food production, and this even becomes more relevant in the case of accelerating urbanization. In addition, it does not require transportation over long distances, which also helps reduce the carbon footprint. In addition, it does not require the use of large amounts of water and pesticides and does not depend on seasonality. 

Interior Design
Therefore, we settled on the idea that the key practice in our ecological restaurant will be harvesting crops from hydroponic farms and cooking meals in front of visitors. In the project we envisaged the processing and composting of waste, and also tried to aestheticize freshness and recycling, using appropriate materials and furniture.
