As you may or may not know, when it comes to coffee there are several different processing methods. Our favorite style happens to be the honey process, hence our name... But also, we'd be lying if we said we weren't partially inspired by Thrice's song "Black Honey."
What is the honey process?
Despite its name, there's actually no honey involved with this particular kind of coffee. It all has to do with the drying process where part of the cherry is left on the bean and remains covered while drying. There are multiple levels of the honey process, which result in several flavors: yellow, golden, red, white, and black. The major differences between the flavors are the drying times, techniques and how much of the cherry is left on the coffee bean.
So why is it called the "honey process" if there is no honey? Part of it has to do with the sticky residue left on the coffee bean. The other part? When it's done right, your cup of coffee can taste like someone added both honey and brown sugar to it.
