Traditional bulgarian food

National bulgarian dish (bob chorba) made from beans, onion, tomatoes, carrots and a variety of herbs. It is often served on Christmas Eve.
Stuffed grape leaves are filled with rice, onion and herbs (in some cases there is also minced meat). Usually consumed with yoghurt and a little bit of lemon juice.
Traditional bulgarian salad  (shopska salad) which includes cucumbers, tomatoes, onions, bulgarian cheese and sometimes black olives and cilantro for decoration. It is usually served in the summer as an appetiser with cold alcoholic drinks like rakia.
These are peppers stuffed with rice, onion, grated tomato and herbs. Also traditionaly had on Christmas Eve.
Banitsa is a traditional bulgarian food prepared by layering a mixture of whisked eggs and pieces of cheese between filo pastry which is then baked in an oven. On New Years Eve lucky charms are put into it. They can be coins or simply pieces of paper with good whishes for what you want to happen in the new year.
Tarator is a cold soup made from yoghurt, cucumber, oil, salt, dill and garlic. Often people add in walnuts on top.
Grilled minced meat with spices (salt, black pepper, cumin) formed into cylindrical and spherical shapes. Usually served with fried potatoes, shopska salad, bread and cold beer.
Tripe soup (shkembe chorba) consists of meat chopped in small pieces. It is spiced with ground red paprika which is briefly fried, often small quantity of milk is added. Traditionally, the soup is served with mashed garlic in vinegar and hot red pepper. 
Vegetable stew usually cooked in a ceramic pot. It consists of many vegetables (potato, tomato, onion, eggplant, pepper, garlic) and sometimes meat (chicken, pork, lamb).
Baked pumpkin is a simple traditional dessert. The pumpkin is flavoured with honey, cinnamon and walnuts and sprinkled with sugar.
