The Raw Gold of México: Coffee

The coffee production in Mexico is the world's 8th largest. 
It is mainly concentrated to the south central to southern regions of the country. The coffee is mainly arabica, which grows particularly well in the region of Chiapas, near the border of Guatemala. Most of the plantations are owned by local indigenous families which take care of the entire process, from the planting to the harvesting and drying. 
Everything is done the traditional way and none of the processes have been mechanized yet. I photographed this family in Sitala, a lost village in the mountains of Chiapas.
