Wireframes & Iterations
First Iteration
The first iteration consists of a large filter fixed on the left-had side of the UI. An availability grid that is also statically placed and will expand as products get added to the grid. In the following screens, products will be searched for and then added to the availability grid. 
Basic first screen, no products, empty grid and nothing searched for yet.
At this point, a search has been made and a list of products are shown
The first product gets added to the grid, populating the badge with a count. Grid does not expand
Second product gets added to the grid. Still collapsed
Grid is expanded and pushes down the products below it. 
Second Iteration
The second iteration has the filter removed and only 2 large section. One dedicated for the grid and the other dedicated for the products. Also the introduction of a simplified filter. In the following screens, products will be searched for and then added to the availability grid.

Third Iteration
The third iteration is slightly different to the others. In this version I've chosen to dedicate more real estate to each one of the components. Seeing that one will search, giving the main focus to the products made sense. I've introduced a side panel that can expand and collapse to view availability of the products that you chose. In the following screens, products will be searched for and then added to the availability grid. 
Clean slate. Pretty much nothing happening
Searched for products and one can now view more products as the filter is simplified and grid is hidden
A product gets added to the availability grid
Expanded the grid to view accommodation level availability
Expanded accommodations to view room level availability
Fourth Iteration
The last iteration was one that I was least convinced about but turned out to be the winner. This concept is a split screen to simultaneously view products and availability as you go. A benefit that none of the other options had. Less real estate for both of the grids but I've added an x-factor to this one - The availability grid section can slide to the left, overlap the products which makes it easy to see availability for longer date ranges. In the following screens, products will be searched for and then added to the availability grid.
