Mate del Estribo / Stirrup's Mate
Es el de la despedida, porque el estribo nos dice que el jinete se ausenta, y toma el último mate antes de partir. 
It is the mate of farewell, because the stirrup tells us that the rider is absent, and takes the last mate before leaving.  
Porque no es el último mate que se ceba sino el que se ofrece a quien se va.
Because it is not the last mate that is poured but the last one offered to whoever is leaving.
