Before & beyond the food is served in any restaurant the hours of prep, grocery shopping, ingredient sourcing, meal planning, table settings, and basically grunt work is what really happens. Frances Ren & her Team Pong have this part mastered in their new Buenos Aires pop-up resto that's clearly Asian inspired. Arriving hours before the pop-up actually popped, I was invited to capture a little bit of the prep & chaos that goes into this 1x weekly production.
