But how does Mata work? When the hot steam of the boiler ascends, through the sieve, it dissolves the essential oils from the distillate. As soon as the steam hits the cold water fountain it condenses and flows into the concrete basin, together with the essential oils. By pulling out the nozzle, it is possible to fill the water into bottles. After a while the essential oils will gather on the water surface and you can pour them off.
