O Bistrô iniciou seu negócio como um restaurante de self service. Com a mudança de sociedade, surgiu a necessidade de criar uma marca que transparecesse seu novo posicionamento, que era a ideia de um restaurante pequeno, com comidas caseiras e com um novo ar ao estilo botequim.
