Dine by Design East 2015

Don’t choke! You’re eating a system

“Dine by Design East” is a full-bodied experience of food, drink, design, and art; and a fundraiser in support of design education at NSCAD University through the Amber Harkins Memorial Scholarship.
The third annual event showcasing design leaders and culinary giants from Atlantic Canada featured Breakhouse and culinary partner, Dennis Johnston.
We created a conceptual and experimental installation based on the theme of food systems and. in particular, the impact of global food systems on our local dining habits. The experience engaged attendees in lively conversation around issues of global food supplies and the challenges and pressures put on our environment and economies as the humankind adapts to feed its burgeoning population.
Our installation and food plan strived to be 100% waste free. Recycled and reusable materials were used for all design elements, food-preparation methods required little to no energy, and all ingredients were sustainably and locally sourced
The result: A mindblowing experience for the eyes, taste buds, and conscience.
