Tripas à Moda do Porto

"Tripas à moda do Porto" is a traditional dish from the city of Porto.
Legend says that in 1415, Henry the Navigator needed supplies for King John's military expedition ships to take over Ceuta, so he asked for the inhabitants of Porto for all the food they could spare. They gave away all the meet they had, leaving only the entrails (tripas) to cook with.
 
To this day, the inhabitants of Porto are called Tripeiros, in honour of this dish.
