The Peranakan culture is very special to Southeast Asian countries like Singapore, Malaysia and Indonesia and is known for their unique, flavorful and colorful fusion foods. More recently, Peranakan food has become popular on a global scale, making its appearance in major cities like New York, San Francisco and London. In this recipe, I wanted to capture the liveliness of this culture and its vibrant cooking process. So much of the food is about the people that made it, the conversations that happen around it and the places they take place in. The chitter chatter and clammering of pots and pans, Nonyas and Babas. Peranakan Cooking is definitely performance in itself. It is an art.
