Despite the seemingly complicated combination of bitter, sweet, sour, and salty flavors found in many Thai foods, cooking Thai cuisine at home is relatively easy as long as you have a few essential ingredients. Thai fish sauce, called nam pla in Thai, is a seasoning made up of anchovies, water, and salt. The seasoning has more than 1,000 milligrams of sodium per tablespoon, so only a little is needed to give a dish some flavor. Another rather strongly flavored ingredient is curry paste, which comes in green, red, Panang, and yellow varieties. The paste is a concentrated blend of spices, chiles, and aromatics that is stirred into broth or coconut milk when making a Thai curry dish.

Rice, specifically sticky rice, is a staple throughout Thailand and is commonly eaten with bread or just out of hand. Jasmine rice is the most frequently used type of rice since it grows in central Thailand, but black sticky rice is another whole-grain option. Both fresh and dry chiles, especially bird chiles, are used in Thai food. Many curries include fresh cayenne chiles, while stir-fried dishes and sauces use bird chiles. Serrano and jalapeño chiles are common substitutes when bird and cayenne chiles are unavailable.
