The first stand is a 'closed' type, it's supposed to protect the user from the knives blade when they are not in use.
The second one, the 'opened' is ment to expose the knives. It's a stand for a proud chef to use, where he can lay the knives at open sight for use. It's also more dangerous, since the blade is unprotected.
