From the City of Honeys towards Europe and beyond

"Why should a 'tech expert' chef like me write about honey?

Humility, a quality that chefs often lack, is what prompted me to write this short introduction.

It is certainly less cool to say that the aroma in my dish comes from a certain honey than from using the latest machine with an unpronounceable name. Honeys, my beekeeper friends taught me to use the plural, are nothing more than concentrations of natural aromas, obtained without complex and expensive machines, in the most natural way possible. The 'tech expert' in me can therefore only feel admiration for this product. In an inexpensive jar, I can have at my disposal the most diverse natural flavours, produced in a sustainable manner, with a long shelf life, and with a marked territoriality. So, it only remains for me to invite everyone to learn more about honeys, and to use them more often in the kitchen.

I would like to thank all the friends who have contributed to this book with their recipes.

The words of Igles Corelli fully express the true soul of the publication Italian Honeys among the Stars.

Corelli, undisputed master of Italian gastronomy, is the coordinator of this book that stemmed from a project designed by the National Honey Observatory based in Castel San Pietro Terme, also known as the City of Honeys, which is a supporting entity, associating beekeeping organisations throughout the territory and connecting the production world with public institutions.

This publication is the natural evolution of Un piatto al miele (A dish with honey), a contest launched by the Observatory in conjunction with Igles Corelli and Cristina Bowerman, two starred chefs who were already ambassadors of the Tre Gocce d'Oro (Three Golden Drops) - Grandi mieli d'Italia award.

24 great starred chefs and the winner of the 2021 edition of Un Piatto al Miele have taken inspiration from Italian regional typical honeys to gift the Observatory with 23 recipes ranging from a first course to a dessert, and also a bread basket.

This new revised edition, strongly wanted by the Observatory Director, Giancarlo Naldi, has been extended and made available in several languages (Italian, English, French, Spanish) in order to complete the ambitious project of promoting “made in Italy” food also internationally.

The online available videos, showing the preparation of each recipe explained by the chefs themselves, represent a unique playlist teaching “prêt-à-porter” gourmet dish emphasizing the unique combination between excellent honeys and the culinary art of the Bel Paese brought to its highest level of research and creativity.

The opportunity to present it in Venice on 18 September 2023 during the event Extraordinary Food and Wine was a unique experience. Thanks to Fausto Brozzi, the event's creator, Igles Corelli and Bruno Cingolani – one of the starred chefs participating in the project - the promotion of Italian Honeys among the Stars INTERNATIONAL officially started. Many initiatives await, including the distribution of the book in 500 5-star hotels throughout Europe and beyond.
