  • Nutripro is a quarterly magazine published by Nestlé that speaks to professional chefs and food service providers. This issue focuses on the elusive fifth taste, umami. It's been associated with eastern cooking but is integral to cuisines world wide. Studies are showing it's use can benefit taste while lowering sodium in dishes. An interesting topic that offered us some beautiful photo opportunities.
          Turns out, it's a very odd thing to buy over 10 pounds of parmesan reggiano at your local grocery.
