Mahón cheese is a soft to hard white cheese made from cow's milk, named after the natural port of Mahón on the island of Minorca off the Mediterranean coast of Spain. Mahón cheese is a product with "Denominación d'Origen Protegida" D.O.P. wich stands for Protected Guarantee of Origin and Quality.
With the purpose of promoting the immense potential of the Mahon-Menorca cheese in the kitchen, the Consejo Regulador de la Denominación de Origen Protegida Queso Mahón-Menorca organized a pairing course for caterers and press, where reputed chefs Carles Gaig, Jordi Herrera, Xavier Franco and Òscar Teixidó were in charge of the cooking sessions along with a sommelier.
For this event i have designed a book that features the career of four chefs including personal interviews and all 12 recipes that were explained during the course, illustrated with professional photographs.
