GUADACHI
Me llamo Hilario Villareal, nací en Delicias, Chihuahua. Mi papá, chihuahuense y nogalero, conoció en una feria a mi jefa, oriunda de Guadalajara; mientras ella cocinaba en una fiesta donde había huapango, banda y mariachi.
De ahí mi pasión por la cocina y la parranda. Desde plebe jugué béisbol, pero mi pasión era el futbol, por eso a los 15 años me fui a probar suerte en Jalisco, tierra de grandes futbolistas. En casa club yo era el que cocinaba y en los festejos era el encargado de los asados, mientras los demás me decían: ¡Échale mi Guadachi! ya que reflejaba mis dos grandes influencias: Guadalajara y Chihuahua.
Reviré que era mejor usando el cuchillo en las manos y no en los pies, por lo cual decidí hacerme la cruz con el legado de mis jefes: los festines y festejos.
Bienvenidos a Guadachi un homenaje a los sabores de estas tierras y a mi vida siempre en fiesta.
No soy ni de aquí, ni de allá.

GUADACHI
My name is Hilario Villareal, I was born in Delicias, Chihuahua. My father, a Chihuahua boy and "nogalero", met my mom, a "jalisciense" woman; while she was cooking at a party where there was huapango, band and mariachi.
That's where my passion for cooking and partying came from. Since I was a kid I played baseball, but my passion was futbol, so at the age of 15 I went to try my luck in Jalisco, land of great futbol players. In the clubhouse I was the one who cooked and in the celebrations I was in charge of "asados", while the others told me: ¡Échale mi Guadachi! because it reflected my two great influences: Guadalajara and Chihuahua.
I decided that it was better to use the knife in my hands and not in my feet, so I decided to cross myself with the legacy of my bosses: the feasts and festivities.
Welcome to Guadachi, a tribute to the flavors of these lands and to my life always in celebration.
I am neither from here nor from there.
