Nixtamal tortillas are made using a traditional process that involves soaking and cooking corn in an alkaline solution, resulting in a nutritious masa that is the foundation of delicious Mexican dishes, including the signature tortillas at Nixtamos.
The Nixtamos brand was built quick and dirty in just a few weeks as a proof of concept that quickly became a food hall favorite. I added an educational aspect to the taco stand, highlighting ingredients, cooking process, and cultural significance. We even expanded the brand to become a hip-hop Tuesday destination in Denver with live music and local artists.
