Urban Sushi Kitchen, at 600 Stewart, is serving noodle soups, rice bowls, and, yes—sushi. There's a large menu of maki and specially concocted house rolls. The restaurant is owned and operated by a husband and wife team, Stephanie and Sean Hyun. They open the doors at 7:30am, selling bagel and croissant breakfast sandwiches with ham and organic eggs, then switch over to chirashi and udon and salmon nigiri later in the day.
