A way I would expand on this project is making other start up kits for all kinds of food allergy, which was my initial concept the store is called FREE for a reason.

A small convenience store that sells a gluten intolerance start up kit for people who just got tested positive for gluten intolerance. From a personal experience this allergy is very confusing and symptoms come in various forms so I believe having a start up kit is really important. This kit will have things like first aid medicine you need to take if you consume gluten, tips on gluten free meals, and a list of symptoms, Gluten substitute, and a list of foods that are gluten free.
