MORE THAN SHAPE - individual thesis project_2019-2020
WHAT :
More Than Shape is a formal research aiming to create new in mouth tasting experiences using 3D printed chocolate.
HOW :
In collaboration with a two star chef and a chocolate maker,
I explored four building logics : Partition, Fold, Support, Break.
The created shapes are then integrated in gastronomic dishes.
WHY :
Today, Food 3D printing is mainly used for decoration.
My goal is to show that it is possible to go way beyond that by using genuine properties of this technology.
HELP :
In collaboration with Sang Hoon Degeimbre (L’Air du Temps **), Dimitri Salmon (La Dacquoise), Gaetan Richard (MIAM Factory) and Dorothée Goffin (Smart Gastronomy Lab, Université de Liège).
