Exploring Mild, Versatile Cabernet Franc Red Wines

One of the longest cultivated varieties of grape, the cabernet franc is less bold than the Cabernet Sauvignon and results in wines that are easier drinking. It is often incorporated within Bordeaux-style red wine blends, but can sometimes be found as a single-varietal vintage in regions such as the Loire Valley and New York’s Finger Lakes. In Italy, red blends known as “Super Tuscan” combine cabernet franc and Cabernet Sauvignon, while fruitier, fuller bodied varieties predominate in Northern California and Washington.

One of the advantages of cabernet franc is that, with mild tannins and sharp acidity, it pairs well with dishes that would otherwise be challenging to find a wine counterpart for. These include pizza and other tomato-based Italian offerings, items seasoned with rosemary, and grilled eggplant, peppers, and asparagus.
