It is a new concept restaurant project designed for Dream group, one of the leading catering establishments in Turkey. The project is located in Galata Port, which has been under construction for Istanbul since 2014. Galata Port is the most important destination project in the world with its 1.2 km coastline by the Bosphorus, a unique cruise port, an exclusive hotel brand, cafes, restaurants, boutique shops, offices and two important art museums.
The subject of the project is the Ocakbasi culture, which is a deep-rooted food tradition in Turkey. Ocakbaşı food culture is a tradition based on Mesopotamian geography centuries ago. This Food culture; It consists of sauced and rested meat cooked on wood fire. Tasters sit in front of the stove where the meat is cooked, watch the chef's cooking method, chat with him and taste the treats offered by the chef. Gathering around a single fire and chatting is the basis of this food culture. This socialization, sharing the same feelings, experiencing the same tastes offers a different dining experience to people. In this project, values belonging to eastern culture were analyzed and traditional values were redesigned with a modern interpretation. The traditional copperwork and stonework of the southeastern region of Turkey, where this food culture emerged, formed the basis of the design. The place is covered with light beige colored natural stones, which are the basic building elements of the southeast region. In the middle of the place, the hearth, which is the cornerstone of the fireside culture, consists of a large hood made entirely of copper by hand. Customers sit under the big copper range hood, experience incredible flavors, and watch the back kitchen elements of this eating culture, such as the preparation, cooking and presentation, like a theater stage.
