Concept
This project reflects upon the essence of gourmet food. What makes a certain dish worthy of the title ‘gourmet’ ?

As a case of study, I chose elevating industrial ‘Creambo’ treats using 3D printing. These new printed parts created a new experience and new unconventional ways of eating this treat.

The project reflected on how we perceive food, how we consume it, what’s the role of technology when it comes to food, and the future of edible 3D printing.
Gourmet
Gourmet is a cultural ideal associated with the culinary arts of fine food and drink, or haute cuisine, which is characterized by refined, even elaborate preparations and presentations of aesthetically balanced meals of several contrasting, often quite rich courses.

Eating Experience
“We are beginning to understand that flavor depends on parts of the brain that involve taste, odor, touch and vision. The sum total of these signals, plus our emotions and past experiences, result in perception of flavors, and determine whether we like or dislike specific foods.”
I choose to reflect upon the role of technology in elevating food into gourmet. I choose to use the Creambo treat; a cultural chocolaty treat filled with swiss merengue cream and a biscuit. This is a cheap mass produced treat, yet it holds a lot of emotions and meaning to many people.
On one hand, I used 3D printing to make the treat more pleasing to the eye.
On the other hand, using such technology allowed me to manipulate this simple treat and create a whole new etiquette and ritual to eating this treat.
The creambo treat placed on the right could be eaten with a spoon starting from the opening made with the 3D print. The chef may also empty part of the cream, fill the treat with gourmet chocolate ganache or a different filling, and then serve it.

The middle creambo treat could be sliced in half using the 3D print, and then may be drizzled with any additive to the liking of the eater before enjoying it.

The treat placed on the left side is elevated from the plate using supports typical in 3D printing. The elevation allows adding another element to the treat such as a ganache or a sweet sauce to the plate without making the creambo treat to get soggy before reaching the client.
