That's cold pink soup, known in Lithuania as šaltibarščiai (shalt-eh-barsh-chay). This garishy pink soup is incredible popular, almost iconic, particularly in summer when the weather can be quite hot. It consists of beetroot blended with soured milk, kefir or yogurt. The mixture has a distinctive pink or magenta color. It is served refrigerated together with halves of a hard-boiled egg and sprinkled with fresh dill.
