Bokeh is the image background, or the quality of blur, you want to achieve using depth of field and light. Sometimes it is distinctive enough to place the image in a setting as in the couple disappearing in to the distance under a canopy of cherry blossoms in High Park or the Niagara icewine with vineyards subtle yet visible in the distance. Other times bokeh is a splash of vibrant colour as in any of the floral images, the background is less visible but still gives you a context of a garden or grasses. Or the bokeh might be a wispy hint of a striped background that provides a backdrop for a luscious meringue pie.
