One of the most common challenges we face as busy young professionals is low energy. We overcommit, stay out too late, get up too early, and generally run ourselves down. Luckily, the benefits of healthy diet can go a long way in picking you up and helping you do everything you want (or need to) do. If there’s one single thing I can recommend for sustained energy throughout the day, it’s to eat your breakfast! The benefits of a healthy breakfast really can’t be overstated, but here are just a couple:
ENERGY! Making sure you get a good dose of fibre, complex carbohydrates and healthy fat at breakfast gives you a jump-start on your energy levels that can positively impact your entire day.

Improved concentration and focus. Your brain needs glucose to function properly and after sleeping for eight hours, your body doesn’t have any. Eating breakfast helps raise your glucose levels BEFORE you get to work so you can focus on your goals instead of your growling stomach.

Reduced cravings. Making sure you start your day with a full stomach reduces hunger throughout the day and sets you up for healthier choices down the road. It’s a lot easier to resist the office candy jar if you haven’t been starving since 9 am!

Start your day off on the right foot. My guess is that you’re not downing two donuts and a stack of chocolate chip pancakes on your way to work, right? Most common breakfast foods, like eggs, oatmeal, or green smoothies, are the kinds of whole, unprocessed foods you want more of in your diet overall.

Chia seed pudding is one of my favourite weekday breakfasts. Chia seeds are a great source of healthy fats, protein, and a whole host of essential vitamins and minerals (to learn more, check out this awesome article). I find chia seed pudding extremely
energizing, satisfying, and you can “cook” it the night before! All you have to do in the morning is grab and go. One warning – it does have quite a gelatinous texture, so if you’re like me and don’t enjoy Jell-O type dishes, this might be an acquired taste. But if I can learn to love it, I have faith that you can too!

How to make Chia Seed Breakfast Pudding by the Online Food Blog

Cook Time: 40 minutes
Yield: 2 servings

A quick and easy breakfast pudding that you can make the night before!
Ingredients

1/4 cup chia seeds
1/2 cup almond milk
1 tsp. vanilla
1 cup blueberries, divided

Instructions
Combine the chia seeds, almond milk, and vanilla in a glass jar and shake to combine.
Let sit in the fridge for a few hours or overnight.
Top with blueberries and enjoy!
