Ingredients: 1 kg. rabbit, 1 kg. potatoes, 2 onions, 2 carrots, 1 parsley
root, 1 tablespoon of flour,
2 cups of chicken broth, 2 garlic cloves, 4
tablespoons of lard, 0.5 cup of tomato puree, bay leaf, pepper, salt.
Cut rabbit carcass into small pieces, add salt, pepper and fry in a pan in
preheated lard. Fry carrots, onions and parsley root together, place them in a
pan with fried meat, pour some water, add sauteed tomato puree, bay leaf and
stew until half ready. Then put the peeled, chopped potatoes and stew until
done. At the end flavour the dish with finely chopped garlic, sauteed wheat
flour, previously diluted with chicken broth or water and simmer. Serve
sprinkled with minced parsley.
