  • Macellarius 

    A restaurant design and experience
  • Macellarius was a final project for a consumer experience course I took this semester.  The goal was to create a full restaurant experience with theme, menu, layout etc.  Our restaurant Macellarius. meaning slaughterhouse in Latin, was to be an upscale steak house in the heart of New York's meat packing district.  Our twist, however, is that all cuts of meat would be butchered by hand in house.  The center piece of the restaurant is a well lit butcher station where guests can see the meat being processed in the old fashioned style.  It is to give the guests an uneasy yet uncompromising experience.  Marcellarius would feature seasonal menus with a limited, but very high quality, array of meals.  The interior is to be bleak and give a run down and authentic experience.  Our waiters would be dressed as butchers as well to help push the experience.

  • Exterior and interior inspirations
  •  Below is a layout of the restaurant where you can see the entry meat shop and waiting room that isolates the experience of the dinning area.  Also the kitchen is closed off to prevent smells until the food is at your table and there is the large glass butcher area for viewing by guests.
  • Below are the spring and winter menus.  They are supposed to look hand written and on butcher paper bound to a leather back by butcher's twine.  The menus are limited in description because any questions will be answered by our wait staff.
