Bisque (pronounced BISS-k) soups are usually made from fish or shellfish – especially crustaceans like crab, shrimp, and lobster. The shells are first roasted, then simmered in water to create the base of the soup. Rice or roux (flour sauce) may be added as a thickener, followed by meat. Modern bisques may also be made from other kinds of meats and vegetables. Consommé (pronounced COSS-oo-may) is a bisque soup, although it’s clarified with egg protein before being served.
Broth is a watered down stock, which is made by simmering ingredients (such as chicken and vegetables) in water. Broth alone can be the only ingredient in soup, but often other items, such as vegetables or rice, are added.
Chowder is a chunky soup traditionally made with seafood, vegetables, and cream, although modern types may include other kinds of meat. It is stew-like.
