The Unglaciated Area of Cheesemakers
 
The southwest area of Wisconsin is the unglaciated area where there exists a community of cheesemakers. Not just any cheesemakers either but those who produce artisan cheese.  Especially Cheesemakers producing raw milk cheese produced from grass fed farmstead herds. The cheesemakers then create thier cheese with in 48 hours after milking. The milk which has unique profiles due to the grasses they feed on create a seasonal taste profiles which gives thier cheese a very special signature.
 In 2011 the Audacious Beer and Cheese Celebration featured  Bruce Workman, Chris Roelli, Mike Gingrich and Andy Hatch as part of the June 24th -25th festival who produce artisan cheese in this very special place in Wisconsin.
